Hearty Omelette

4 x Free Range Eggs

80g Corned Beef (or other left over meat)

3 x Cloves Garlic

4 x Button Mushrooms

1 x Cup Baby Spinach

1 x Tomato

20g x Lite Shredded Tasty Cheese

1 x Ground Coriander

1 x Tsp Chilli Flakes (optional)

1 x Tsp Ground Cumin

Salt to taste

Pepper to taste

Step 1

Chop corned beef into small squares and dice mushrooms and garlic

Step 2

Place above ingredients in a bowl and add spices and cheese, mixing well

Step 3

Crack eggs into a separate bowl and whisk until well beaten

Step 4

Add egg mix to other ingredients, mixing well to combine

Step 5

Heat a non-stick pan to moderate - high heat and pour the omelette mix into the pan, spreading evenly

Step 6

Cook for approximately 15min until the top appears mostly set, then fold half of the omelette over the other half and cook for a further 10min

Step 7

Serve with baby spinach and finely diced tomato with cracked pepper on top
